Raspberry Arugula Salad

Arugula is hands down my favorite green! It’s peppery flavor provides a naturally cooling effect on the body, making it the perfect choice for warm weather salads. Arugula is also a rich source of Vitamins A, C and K, iron, copper and phytochemicals.

This salad is a delectable combination of spicy arugula, sweet raspberries and tangy goat cheese tossed in a homemade Honey + Red Wine Vinaigrette. You will definitely want seconds!

Raspberry arugula salad

 

INGREDIENTS: 

  • 4 cups arugula
  • 1 pint raspberries
  • 1/4 cup sliced almonds
  • 2 oz soft goat cheese, crumbled
  • 1/4 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon honey

DIRECTIONS: 

  1. Prepare the vinaigrette by combining the olive oil, red wine vinegar and honey.
  2. Toss the arugula, goat cheese and dressing together until evenly coated.
  3. Sprinkle sliced almonds and raspberries on top and serve!
