Arugula is hands down my favorite green! It’s peppery flavor provides a naturally cooling effect on the body, making it the perfect choice for warm weather salads. Arugula is also a rich source of Vitamins A, C and K, iron, copper and phytochemicals.
This salad is a delectable combination of spicy arugula, sweet raspberries and tangy goat cheese tossed in a homemade Honey + Red Wine Vinaigrette. You will definitely want seconds!
- 4 cups arugula
- 1 pint raspberries
- 1/4 cup sliced almonds
- 2 oz soft goat cheese, crumbled
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon honey
- Prepare the vinaigrette by combining the olive oil, red wine vinegar and honey.
- Toss the arugula, goat cheese and dressing together until evenly coated.
- Sprinkle sliced almonds and raspberries on top and serve!
